Easy Cooking When Staying In
These are uncharted times! I’m pretty sure no one can say they have lived through a time where we all watched daily the numbers of a novel virus creep up. And how the world reacted. It get exhausting to me by the end of the day.
So, I have to think about things I like to do. Cooking!
Cooking has always been a way for me to connect with the end of the day and those I love dearly.
Looking for and trying new recipes is usually fun for me, but during this crazy time, I’ve found myself gravitating to easier, simpler recipes. And sometimes when we are under stress, our bodies need some comfort. That’s ok.
Now, since my kids are home with me all day, and I’m not good at keeping a schedule, I’ve had to be more flexible in my meals. Sometimes I only have about 30 minutes to make a meal but other days I can pull together a crockpot meal. It just depends. One thing I’m trying not to do is stress too much about being perfect. When dealing with the unknown, I find its easier to let lots of expectations go.
